Meal Plan Monday January 20

Last Monday I had a meal plan. I had a post mostly written about how we'd had a fabulous weekend even though we didn't really do anything. And then I went to make my image and my image editor wouldn't work. It wouldn't let me edit anything. It had been happening a lot and it was a real pain in the arse.

I figured it would work later in the day but it didn't. It wouldn't work the next morning either. So I deleted it and bought a new version. It worked! But I was busy on Tuesday and didn't have time to make my image and then we went out Tuesday night. I can get behind posting my meal plan a day late but two days late? A meal plan on a Wednesday? I just couldn't do it.

Meal plans are easier to follow hen they are online because Lee can just look at the blog and see them. We did mostly follow it. Pizza got bumped to Friday. Saturday turned into fondue night because I was craving it and Lee had never had fondue. I, of course, forgot to take a photo. It was delicious and well, who doesn't like an excuse to dip things in cheese?

We did another deep dive in our chest freezer, because it was full and I had no idea what was in there anymore. I'd already made the meal plan at that point but I went back and changed a few items. Aside from picking up fresh produce, we've not has to buy much this month. We're reallllllly liking the small grocery bills. Small grocery bills rule.

Meal Plan January 20 |

Monday: Spicy peanut tofu sandwich, part of our continuing series of "Making Lee Like Tofu." (It's been a successful run so far.)

Tuesday: Lemon garlic pork chops with veggies on the side.

Wednesday: Meatloaf, BBQ baked beans and mashed potatoes.

Thursday: Tortellini soup. I'm scheduling this even though I'm the only one home because we probably won't have any leftovers and I've been really lazy the last few weeks we haven't and leftovers.

Friday: Pierogis and kielbasa

Saturday: Pulled pork. We thought we had two pork shoulders in the freezer. We had three. And a pork butt. We need to cook some pork!

Sunday: Leftovers. Maybe I'll turn the leftover pulled pork into tacos. That always makes Lee happy. If I'm feeling ambitious maybe I'll make homemade tortillas.
