The busy part of our holidays is done. We're at the point where we're cleaning up relaxing and seriously craving green vegetables. We're watching all the movies. We're being total couch potatoes and I'm not going to lie, it's rather wonderful. It's nice to be able to sit and be still and not change out of my pjs if I don't want to.
As much as I love the holidays and the food that comes along with them, I'm ready to be eating our regular meals again. I had a salad for breakfast this morning because I was desperately craving fresh vegetables. When we made the meal plan this week, we were looking for food that was rather the opposite of what we spent the past week eating. We want pasta! And beef! And absolutely no poultry.
Monday: Pasta with meat sauce. Lee loves this recipe so I pretty much totally made his day.
Tuesday: Grilled flank steak salad. Basically a citrus and garlic marinated flank steak that we'll throw on the indoor grill (because it's too darned cold outside to grill -- frostbite warning!) and serve on some greens with grape tomatoes and topped with a homemade dressing. It's a riff on a Bonnie Stern recipe.
Wednesday: Guinness beef stew and duck fat roasted potatoes. The stew is one of the best things I made in 2013. Instead of making it a pie, Lee requested roasted potatoes and I just happen to have some duck fat in the fridge. Mmm.
Thursday: Probably leftovers. Or if Lee is home, maybe I'll make a cheese fondue.
Friday: Spicy shrimp with yogurt and either quinoa or rice.
Saturday: Butternut squash enchiladas.
Sunday: Pork chops and balsamic roasted vegetables.
