Shipper's Carrot Soup

I got this recipe a few years ago from Shane the Shipper. I've made it a few times although it's been awhile because my blender died a year or so ago. It was old. My mother made my baby food in it (no, I was not a Gerber baby). It was death by margaritas. There are worse ways to die.

Anyway, this soup is yummy. It's a good basic recipe. All amounts are approximations that you can play with. I think I'm going to try to play with it at some time and try carrot ginger soup. This yields quite a bit. I have a liter in the freezer and about that much in the fridge.

Shipper's Carrot Soup

2 lbs carrots, peeled and coarsely chopped
2 ribs celery, chopped (I didn't have celery so I used celery seed, lol)

1-2 onions chopped
1-2 cloves garlic, smashed
1-2 tsp basil
1-2 tsp oregano
chicken broth (or OXO cubes as directed) or water
1 pint 15% cream
salt and pepper to taste

Put carrots, celery, onions and garlic in a large pot. Add enough chicken broth so it covers carrots plus a few inches. Bring to a boil and simmer until carrots are tender. Do not drain!

In batches, puree in a food processor or blender. Be careful! It's hot! Transfer the purees to another pot (I put them in a big bowl and then back in the pot when when I was finished with all the puree action).

When everything is pureed add the cream and herbs. Season with salt and pepper to taste.

If soup is too thick just as more chicken stock or water until desired consistency.

I added the full amount of cream but I think I prefer it with about half as much. It's a good basic recipe. Lots of ways to play with it.
