Oh yum!

I just finished eating my dinner (I know - I ate early tonight!). My pork tenderloin was fanfreakingtastic. I wrapped it in tin foil, placed it on a baking sheet and cooked it at 350F for about 1 hour 10 minutes (the guy recommended 120 but my oven tends to cooks things fast...). I wasn't sure if it was really done because it looked kinda pink so I pulled out my trusty kitchen thermometer and it said it was cooked. I'm glad I did because when I cut into it, it was cooked perfectly. It tasted sooo good - the pork with the feta, spinach and bacon inside it and rosemary on the outside. mmmm

I decided against mashed potatoes. I wasn't in the mood. Instead I had mixed greens and tomato with oil and balasamic vinegar. Yum. I really have been craving tomatoes lately. Maybe that's why it tasted so good. ;-)

And later, for a snack, I can slice and toast some of the french bread, rub it with a garlic clove and top with bocconcini and tomato and maybe a itty bitty drizzle of balsamico. mmmmmmmm
